I’m so excited to finally share this delicious recipe for Chocolate Mint Bars.  My mom has been making these for as long as I can remember and now all the grandkids request Grammy’s mint bars for holidays, vacations – even birthdays.  My mom better not even think about showing up to a family vacation without a huge bin of these delicious bars.

These delicious bars consist of two layers.  The first layer is very similar to a brownie – rich, chewy and fudgy.  The second layer is a creamy mint frosting topped with chocolate sprinkles. These Chocolate Mint Bars are famous in our family and the absolute best dessert – especially if you love the combination of mint and chocolate.  I can guarantee that once you make these bars, you’ll be making them for every family gathering, holiday, and more!

Ingredients Needed to Make Chocolate Mint Bars

  • Unsweetened Baking Chocolate Bars
  • Butter – I recommend unsalted but I don’t think it really matters.
  • Eggs
  • Sugar
  • Mint Extract
  • Flour
  • Salt
  • Powdered sugar
  • Milk
  • Green food coloring – optional
  • Chocolate sprinkles – optional but we all know sprinkles make everything better

How to Make Chocolate mInt Bars

To prepare the bottom layer: Melt chocolate and butter together in sauce pan over low-medium heat. Set a side to cool. In a medium bowl, beat eggs until frothy. Stir in sugar and chocolate mixture.  Add mint extract, flour and salt.  Stir to combine.  Pour into 9×13 baking pan and bake at 350 degrees for 25 minutes.  Once done, let cool before adding frosting.

To make frosting: Combine melted butter, powdered sugar, milk, mint extract, and green food coloring in medium bowl.  Use a hand mixer to beat ingredients together until smooth. Spread over bars immediately.  Frosting will harden quickly.  Sprinkle chocolate sprinkles over frosting.

Tips for Making Chocolate MInt Bars

Cut bars into small squares.  These bars are rich so my mom always cuts them into smaller squares.  You can always go back for seconds – which you will!

Store these mint bars in an air-tight container.  Make sure you do not store other baked goods in the same container.  My mom makes these every year for Christmas but you cannot store them with other cookies unless you want all your cookies to taste like mint.

These delicious bars definitely taste better chilled.  Store in the refrigerator to keep them fresh longer and because of the mint icing.  You can even freeze them if you want to make them ahead of time for a special occasion.

This is definitely a classic Christmas dessert because of the green icing but they really are delicious and perfect for every occasion.  And, you don’t always have to add green food coloring.  You can make them red for Fourth of July or just leave the frosting white.

Don’t like mint?  No problem.  Just replace the mint extract for vanilla extract.

Chocolate Bars

  • 4 packs unsweetened chocolate (4 ounces)
  • 2 sticks of butter
  • 4 eggs
  • 1 1/2 cup sugar
  • 1/2 tsp. peppermint
  • 1 cup flour
  •  1/2 teaspoon salt

Mint Frosting:

  • 6 tablespoons melted butter
  • 3 cups powdered sugar
  • 3 tablespoons milk
  • 2 teaspoons mint extract
  • green food coloring
  • Chocolate sprinkles

Instructions
