These Gooey Butter Pumpkin Bars are the best pumpkin bars I’ve ever had!  They’re soft and full of pumpkin flavor – everything you want in a delicious pumpkin bar recipe.

Easy Pumpkin Bars

Oh my gosh!  Can you tell we are pumpkin lovers in this house?!  I didn’t really plan on sharing this many pumpkin recipes but I can’t stop baking pumpkin treats.  I’m apologizing now if you’re not a pumpkin lover because I’ve been on a pumpkin kick this month.  But, if you’re a pumpkin fan then you’ll love all these fabulous pumpkin recipes.

And, I know I keep saying this but this might be the best one yet.  I know, I know –  I said that about the Pumpkin Pie Dip.  Well, that’s a tough one because that was delicious.  You know what?  Just make them both and indulge on pumpkin treats while binge watching Netflix this weekend.

What makes these Gooey Butter Pumpkin Bars so Good?

Gooey Butter Pumpkin Bars are so soft and bursting with pumpkin flavor.  I added white chocolate chips because I think they taste better with pumpkin but feel free to use chocolate chips.  There is also cream cheese in this recipe which makes these bars soft and chewy.  And, this recipe only calls for a few ingredients which means one thing – you can whip these bad boys up in no time.

These pumpkin bars are so easy to make because you use a boxed cake mix, plus just a few additional ingredients including cream cheese, butter, pumpkin puree, and pumpkin pie spice.  This recipe is definitely a new family favorite!

Gooey Butter Pumpkin Bars {The Best Pumpkin Bars!}

Ingredients
  

  • 1/2 cup butter room temperature
  • 1 8 oz. package cream cheese room temperature
  • 1 egg
  • 3/4 cup pumpkin puree
  • 1 box spice cake mix
  • 2 teaspoons pumpkin pie spice
  • 1 cup white chocolate chips
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat oven to 350 degrees.  Line a 9 x 13 pan with parchment paper or spray with nonstick cooking spray.
  • In large bowl, cream butter and cream cheese together. Add egg and pumpkin puree and continue to beat.
  • Add cake mix and pumpkin pie spice.  Mix until well combined.
  • Stir in white chocolate chips.
  • Press dough into prepared baking pan.
  • Bake for 20-25 minutes or until edges are brown.
  • Let cool for 10 minutes.  Sprinkle powdered sugar over entire pan of bars
  • Cut into bars.

Notes

Store bars in airtight container.
