  • Corn -can use fresh corn, frozen or canned corn

  • Onion – finely chopped, we used a yellow onion

  • Butter: used to saute the onions and garlic in the slow cooker
  • All-purpose flour – helps thicken the soup
  • Thyme, onion powder, garlic powder, salt and black pepper – enhances the flavor of the chowder

  • Add butter to slow cooker and allow it to melt.  Add the onion and the garlic and let it cook for about 5 minutes.  
  • Add chicken, corn, potatoes and spices to slow cooker and mix together.  Pour some of the chicken broth into the slow cooker and mix everything together. Allow to cook for about 3 hours on high heat. 
  • In a small bowl or measuring cup add flour and the remaining chicken broth and mix together to create a slurry.  Make sure there are no lumps of flour in the slurry and add to the slow cooker and stir in and allow to thicken chowder for about 1 hour and potatoes are tender but not mushy.  
  • Add in heavy cream, stir and continue to heat until heated through.

Ingredients
  

  • 2 tablespoons butter
  • 1/2 cup onion diced
  • 2 tablespoons minced garlic
  • 2 chicken breasts
  • 1 bag frozen sweet corn (10 oz) or 1 can of sweet corn (15 oz)
  • 1/2 bag frozen carrots (more if you want)
  • 2 cups cubed potatoes of choice
  • 3 cups chicken broth
  • 2 teaspoons dried thyme
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons flour
  • 1/2 cup heavy cream

Instructions
 

  • Turn your slow cooker on high and when heated add the butter and allow to melt. 
  • Add the onion and the garlic and let it cook for about 5 minutes.  All slow cookers are different, so keep an eye on the onion and garlic to make sure it doesn’t burn.
  • Turn your slow cooker down to medium and add the chicken, corn and potatoes and mix together. Add only 2 ½ cups of the chicken broth, reserve ½ cup for later.  Add thyme,onion powder, garlic, salt and pepper. Allow to cook for about 3 hours on high heat.
  • In a small bowl or measuring cup add flour and the remaining chicken broth and mix together to create a slurry (make sure there are no lumps of flour in the slurry). Add to the slow cooker and stir in and allow to thicken chowder for about 1 hour and potatoes are tender but not mushy. 
  • Add in heavy cream, stir and heat through.  Serve when hot.
