We’ve been making these donut muffins all summer long and guess what?  I don’t even feel guilty about it.  First of all, they are baked and not fried so that’s a huge win and they are mini.  That means you can eat just one or two or three – no one needs to know.

These baked donut muffins are super easy to make and come together quickly making them the perfect weekend breakfast treat. Plus, they have sprinkles and we all know sprinkles make everything better.

How to Make Funfetti Donut Muffins

First make the batter. For this step, you’ll combine the dry ingredients in one bowl and the wet ingredients in another bowl.  Then you’ll combine the two and fold in sprinkles. 

Next, add batter to mini muffin cups and bake.

While the donuts are baking, prepare the glaze by mixing together the milk and powdered sugar.

Remove donuts from oven and let cool.  Once cool, dip in glaze and top with additional sprinkles.

Ingredients
  

Donut Muffins:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1/3 cup sugar
  • 1/4 cup milk or half and half
  • 1/4 cup Greek yogurt
  • 1 egg
  • 2 tablespoons butter melted
  • 1/2 teaspoon vanilla
  • 1/2 cup rainbow sprinkles

Vanilla Glaze

  • 2-3 tablespoons half and half or milk
  • 3/4 cup powdered sugar
  • extra sprinkles

Instructions
 

  • Preheat oven to 350 degrees. Spray a mini muffin pan with non-stick spray.
  • Mix flour, baking powder, baking soda, nutmeg and sugar in mixing bowl. Set aside
  • In separate bowl, whisk creamer, yogurt, egg, and melted butter together until smooth. Add wet ingredients to dry ingredients and mix until well combined. Fold in sprinkled.
  • Add a spoonful of batter into mini muffin cups, filling 3/4 of the way.
  • Bake for 10 minutes.
  • While donut muffins cool, stir together creamer and powdered sugar until well-combined.
  • Dip donut tops into icing.
  • Top with sprinkles.
