What is Rotel Dip?

Rotel Dip is an easy dip that calls for 3 simple ingredients – sausage, cheese, and Rotel tomatoes. This dip is called Rotel dip because the star of the recipe is Rotel which are petite, diced tomatoes with green chilis and spices. Rotel can be found in the canned vegetable aisle of your grocery store. I usually use the the original Rotel when making this recipe but if you like spicy, feel free to use the spicier versions.

  • Rotel Original Diced Tomatoes & Green Chilies – a blend of petite diced tomatoes, green chilies and spices.

How to Make Rotel Cheese Dip with Sausage

Variations

Want to make some changes to this cheesy appetizer? This dip can easily be altered to include ingredients you love or already have in your fridge or pantry.

  • Rotel Dip with Ground Beef – Swap out the sausage for ground beef for a milder dip recipe. This dip will still taste amazing!
  • Rotel Dip with Cream Cheese – Don’t want to use Velveeta cheese? This dip tastes great with cream cheese in place of the cheese. It will taste slightly different but it will still be delicious.
  • Rotel Dip with Cheddar Cheese – Another easy swap is to use cheddar cheese in place of the Velveeta cheese. I recommend using block cheese and shredding it yourself.
  • Rotel Dip with Salsa – I guess it technically wouldn’t be called Rotel dip but the Rotel can be swapped out for a jar of salsa if that’s what you have in your pantry.

Tips and Tricks for Making This 3 Ingredient Dip

  • Are you making this dip for a party? Double or triple the recipe.
  • Room temperature ingredients are best for this recipe. Cream cheese that is softened and at room temperature will blend best when making cheesecake dip. Milk that is almost at room temperature is also recommended when making this dip.
  • Store leftover dip in airtight container in the refrigerator for up to four days. If making this dip ahead of time, refrigerate in airtight container. To serve, heat dip on stovetop or add to a slow cooker and heat on low.
