Easy Rum Fudge {A Delicious Holiday Treat}

Raise your hand if you love making Rum Balls for the holidays.  Well, if you do, you’re are going to love this recipe!  I’ve taken the classic recipe for Rum Balls and turned it into a rich fudge that’s easy and delicious.

Easy Rum Fudge Recipe

We were headed to a Christmas party over the weekend and I wanted to bring rum balls for a festive holiday treat but I did not have time to roll out all the balls so I decided to make fudge instead.  And, I have to admit, they taste AMAZING!  This is what they call the best of both worlds – all the same ingredients found in rum balls, the same great taste but cut into small squares instead of having to roll out individual balls.

How to make Rum Fudge

I really wanted to call this recipe Rum Ball Fudge but it didn’t feel right since we aren’t actually rolling the dough into balls.  We’re being lazy and just pressing the dough into a baking dish and cutting them into small squares.  Doesn’t that sound better?

I started by crushing a package of vanilla wafers into crumbs.  I used my Ninja Bullet but any food processor will work.  You can also use a Ziploc bag and a rolling pin.  Then I chopped a cup of pecans into small pieces.  This is the hardest part of the entire process.  Next, just mix the cookie crumbs and pecans with powdered sugar and cocoa.

In a small bowl, mix the rum with corn syrup.  Slowly add the rum mixture to the dry ingredients until the dough forms.  Press dough into a baking dish and place in the refrigerator for a few hours.

The last step is to make the chocolate topping to spread over the fudge.  This step could be optional but it definitely makes the fudge look pretty.  Just melt chocolate chips, butter and little corn syrup using a double boiler.  Add sprinkles and return to refrigerator until everything sets.  Cut into small squares and your rum fudge is ready to eat.

I will warn you – it will be hard not to taste this fudge before serving it so you might want to just double the recipe.  That way you can keep some for yourself and share the rest.

Ingredients
  

Fudge Layer:

  • 1 12-oz. package vanilla wafers, finely crushed
  • 1 cup chopped pecans
  • 3/4 cup powdered sugar
  • 2 tablespoons unsweetened cocoa
  • 1/2 cup rum
  • 2 1/2 tablespoons corn syrup

Chocolate Topping:

  • 8 ounces semisweet chocolate chips or chopped chocolate
  • 1 tablespoon butter
  • 2 teaspoons corn syrup
  • sprinkles

Instructions
 

  • Stir together cookie crumbs, powdered sugar and cocoa in large bowl.
  • Whisk together bourbon and corn syrup in small bowl.
  • Slowly add bourbon mixture to dry ingredients and mix together until well blended.
  • Press dough into 8x8 baking dish and refrigerate until set, at least 2 hours or overnight.
  • Meanwhile, melt chocolate with butter and corn syrup over low heat in a double boiler.
  • Pour chocolate over chilled bars and spread evenly.  Sprinkle with sprinkled and press into chocolate.
  • Chill until chocolate is set.
  • Cut into bars before serving.

Notes

  • Store in an airtight container in the refrigerator.  You an also freeze.
  • Easily swap out the rum with half & half for a non-alcoholic version.
