One of my favorite things about this time of year is sitting on our deck and being able to cook dinner on the grill. And, guess what my friends? I have the perfect summer grilling recipe that will quickly become everyone’s favorite. Today, we’re making Pork Sliders with Mango Pineapple Slaw. Doesn’t that sound delicious?

Next, we’re going to whip up our Mango Pineapple Slaw. First of all, you can’t have a pork slider with out coleslaw. But plain coleslaw can be a little boring so I decided that we needed to add some mango and pineapple chunks to our coleslaw this summer. Have you tried this before? If not, your missing out.
Finally, you just need to assemble your delicious Pork Sliders with Mango Pineapple Coleslaw. Slice your slider buns, place a few slices of pork tenderloin on the bun along with your favorite BBQ sauce, and add your mango pineapple coleslaw. Pile it high and don’t worry if it falls all over the place. The messier, the better:)

Pork Sliders with Mango Pineapple Coleslaw – Grilled pork topped with homemade Mango Pineapple Coleslaw. An easy summer dinner!
Ingredients
- 1 Smithfield Roasted Garlic & Herb Marinated Fresh Pork Tenderloin
- 4 cups shredded cabbage (I used red and green)
- 1/2 cup grated carrots
- 1/2 cup pineapple, diced
- 1/2 cup mango, diced
- 1/3 cup Greek yogurt
- 1/2 tablespoon apple cider vinegar
- 1 tablespoon pineapple juice
- 2 tablespoons cilantro, chopped
- a squeeze of lemon juice
- 1/2 teaspoon onion powder
- salt and pepper to taste
- 12 slider buns
- BBQ sauce (optional)
Instructions
- Prepare pork tenderloin according to package directions. Slice thinly.
- In medium bowl, mix cabbage, carrots, pineapple, and mango.
- In small bow, whisk yogurt, vinegar, pineapple juice, onion powder, salt and pepper. Pour over cabbage mixture and toss to coat.
- To assemble sandwiches, add pork, BBQ sauce, and mango pineapple coleslaw to slider buns.
- Enjoy!
