Quick Balsamic Chickpea Salad Recipe

Chickpea Salad topped with balsamic vinegar and full of fresh veggies – A delicious salad and perfect lunch for busy week days.
I am always looking for quick and easy lunch ideas for myself and my hubby. My husband leaves for work at 5 a.m. and I have to be out of the house by 7 a.m. The last thing we want to do in the morning is pack a lunch. So I’ve been making this delicious Chickpea Salad for us.  It is so good and it’s an easy, healthy lunch for both of us – which is always a good thing.
This healthy salad is full of chickpeas and fresh veggies with lots of flavor. I’ve started making more and more salad with beans instead of lettuce for extra protein and they stay fresh longer. I can make this salad on Sunday and we can eat it all week long.

Ingredients
- 1 can of chickpeas (Garbanzo Beans)
- 1 tomato, diced
- 1 small cucumber, diced
- 1/2 onion, diced
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- salt and pepper to taste
- Basil
Instructions
- Drain and rinse canned chickpeas.
- In medium bowl, combine all ingredients.
- Top with fresh basil.
Notes
If you are not a fan of balsamic vinegar, you can easily swap it out for red wine vinegar or your favorite low calorie dressing.
