Bacon, Tomato, and Parmesan Bean Salad – A delicious and hearty salad full of fresh veggies and tossed in a delicious balsamic and olive oil dressing.  Top it with almonds and Parmesan cheese for a delicious salad everyone will love.

I love a good salad and I’m always looking for an easy salad recipe to make for the holidays.  We visit multiple family members on Christmas Eve and Christmas and it would be difficult to take a side dish that needed to be heated in the oven so I always volunteer to bring a nice salad.  This bean salad is the perfect holiday side dish!

This salad combines all of my favorite flavors and the dressing is so easy to make.  I keep the dressing in a mason jar in the refrigerator so I have it for all my favorite salads.  And, the best thing about this recipe is you can make it ahead of time.  This is such a huge time saver.  The beans won’t wilt so this salad can be stored overnight in the refrigerator.   Then, toss in the dressing, top with sliced almonds and Stella shaved Parmesan cheese, and your salad is ready to be served.

Bacon, Tomato, and Parmesan Bean Salad - Ingredients

The crunch of the beans and almonds with bacon, fresh Parmesan cheese, and the balsamic vinegar is the perfect combination.  I’m going to have to start using beans in my salad more often. And, let’s talk about using adding fresh Parmesan cheese to all my favorite recipes.  What a different this makes!  I used Stella® Parmesan shavings because it’s fresh and a brand that I can always trust to bring the best flavor to my recipes.

Ingredients

  • 4 - 5 cups of beans green and yellow
  • 1 small red onion finely chopped
  • 2 cups cherry tomatoes halved
  • 1 cucumber diced
  • 5 strips of bacon
  • 2 tablespoons balsamic vinegar
  • 4 tablespoons olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon Italian seasoning
  • Stella freshly shaved Parmesan cheese
  • Chopped almonds
  • Salt and pepper

Instructions

  • Cook bacon in a skillet until crispy. Drain the fat then cut bacon into small bits. Set aside.
  • Bring a large pot of salted water to a boil. Add the green beans and yellow wax beans to the water and blanch for about 2 – 3 minutes (until the beans are just barely cooked through, but still crisp).
  • Drain beans after they are barely cooked through and still a little crisp. Transfer into ice water to stop them from cooking.
  • To make the dressing: combine olive oil, balsamic, Italian seasoning, honey, salt and pepper in a small jar with a lid and mix well.
  • Place beans, onion, cherry tomatoes, and cucumber in a large salad bowl. Pour in some of the dressing and toss to coat. Sprinkle in bacon, sliced almonds, and Parmesan cheese and toss to combine.
  • Enjoy!
