Let’s talk breakfast today.  I don’t know about you but I’m constantly struggling with eating a healthy breakfast.  I either don’t eat breakfast at all or I crave something sugary like a donut.  The problem is I need something quick and easy that I can grab as I head out the door in the morning.  I’ve been on the lookout for something healthy that I can make ahead of time and I finally found it.

These super food breakfast bars are easy to make and loaded with healthy ingredients.  And, the best part – they can be made ahead of time, which is exactly what I need.

I’ve also been researching superfoods and the benefits of eating them with every meal so I created these Superfood Breakfast Bars packed full of goji berries, dried blueberries, pecans, sunflower seeds, and oats.

You can’t beat a healthy breakfast that you can make ahead of time and that tastes great.  Some healthy foods just don’t taste that good but these taste great.  The blueberries and goji berries give these bars the sweetness that I crave without adding any extra sugar to the recipe.  I’ve been making these bars on Sunday and keeping them in an airtight container in the refrigerator for the week.  A perfect breakfast for the entire family as we head out the door to work and school.  This is what I’m talking about!

Ingredients
  

  • 2 1/2 cups Old Fashioned Rolled Oats
  • 1/4 cup dried blueberries
  • 1/2 cup goji berries or dried cranberries
  • 1/4 cup sunflower seeds
  • 1/2 cup chopped pecans
  • 1 tablespoon chia seeds
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup coconut oil - melted
  • 1/4 cup honey
  • 1/2 cup peanut butter

Instructions
 

  • Preheat oven to 350 degrees. Spray 9 x 9 baking dish with cooking spray or line with parchment paper.
  • Mix all dry ingredients in large bowl.
  • In medium bowl, mix eggs, coconut oil, honey and peanut butter. Slowly combine wet ingredients with dry ingredients.
  • Spread mixture evenly into the baking dish. Bake for 20-25 minutes or until bars are light golden brown and center is firm. Let cool for 5 minutes before cutting into squares.
  • Store in an airtight container.
  • Enjoy!
