Yum!  I finally made something that Easton likes to eat.  He is turning out to be a very picky eater and I’m not going to put up with it:)  I can remember Connor eating anything and Easton has to try things a few times before he actually likes it.

I’ve been testing out some finger foods that he can eat on his own and I can add these Sweet Potato and Blueberry Pancake Bites to the list.  He LOVED them and so did Connor.  I have to admit that I liked them too.  They’re perfect for breaking into little pieces for Easton and Connor loves dipping them in syrup.

Ok my friends, I have a huge confession to make – I’m horrible at making pancakes on a griddle.  That’s why I’m totally obsessed with making these pancake bites in a mini muffin pan.  Not only are they the perfect size, but you can’t mess them up.

These pancake bites are full of flavor.  I’m loving the combination of sweet potato and cinnamon with the blueberries.  I might actually add more sweet potato puree the next time I make them.  But I’m just glad that I found something that Easton will eat that’s packed full of fruit and veggies.

Servings 24 Pancake Bites

Ingredients
  

  • 1 1/4 cups whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 egg beaten
  • 1 tablespoon unsweetened apple sauce can substitute oil
  • 1 4 ounce jar sweet potato baby food
  • 1/2 teaspoon vanilla
  • 1/2 cup milk
  • 1 cup blueberries

Instructions
 

  • Preheat oven to 350 degrees. Spray mini-muffin pan with cooking spray.
  • Mix dry ingredients in medium bowl.
  • Add egg, apple sauce, baby food, vanilla, and milk to dry ingredients. Stir together. Add blueberries until well combined.
  • Fill each muffin cup about 3/4 of the way with pancake batter.
  • Bake for 11-13 minutes.
