If you love pina coladas, you’re going to love this Sparkling Pina Colada Rum Punch.  This delicious cocktail combines sparkling wine with pineapple juice and coconut rum making it the perfect summer cocktail!

Sparkling Pina Colada Rum Punch

What do you get when you combine pineapple juice and coconut rum with sparkling white wine?  A delicious tropical cocktail that tastes amazing!  This might just be my new favorite cocktail recipe but I think I say that every time I share a new drink recipe:)

This recipe is easy to make and only requires 4 ingredients making it the perfect cocktail recipe for all your summer parties.  Plus you make an entire pitcher instead of having to make individual drinks which is why it’s great for a crowd.

How to make Sparkling Pina Colada Rum Punch

Start by adding an entire can of pineapple chunks with the juice to a large pitcher.  Just open and dump.  Then, add 2 cups of coconut rum and stir.  Next, add about half a cup of maraschino cherries with a few ounces of the cherry juice to the pitcher and refrigerate until ready to serve.

When you are ready to serve this delicious drink, remove pitcher from refrigerator and add two bottles of chilled sparkling white wine to the large pitcher.  I like sweeter sparkling wines like Barefoot Bubbly Moscato or Cupcake Moscato D Asto but if you like your drinks to be less sweet, I would recommend a dry white like Cupcake Prosecco.  Stir all ingredients in pitcher together and pour into wine glasses.

I should warn you that this rum punch will go fast so you might want to make sure you have extra ingredients on hand.

Ingredients

Scale
  • 20 oz can pineapple chunks with juice
  • 2 cups coconut rum
  • Maraschino cherries with a few ounces of juice
  • 2 (750 ml) bottles sparkling white wine

Instructions

In a large pitcher, combine pineapple chunks with juice, coconut rum, and cherries.  Refrigerate for at least an hour.  Add sparkling wine and serve immediately.

  1. It looks like you have coconut clinging to the rim of the glass. What did you use to wet the rim and get the coconut to stick? Is the coconut toasted? It does make the drink very pretty!
