School’s starting next week and I’m adding more and more one skillet meals to my meal plan. I want easy dinners that I can whip up quickly and this Egg Roll Skillet might just be the easiest dinner ever.

What Ingredients will I need for this Egg Roll Skillet?

This delicious skillet meal is exactly what it sounds like – an egg roll in a bowl! It’s just like eating an egg roll without the fried wrapper. But, guess what? I think it’s even better than an egg roll because you get the same great taste without the mess and greasiness.

I’m happy to report that this recipe does not call for any fancy ingredients and everything can be found at your local grocery store. All the delicious ingredients you’d find in an egg roll can be found in this one skillet meal. You start with Mazola corn oil, garlic, and ginger and add diced onions, ground turkey, and cabbage to a hot skillet. Once the cabbage has wilted, add soy sauce and top with green onions.

That’t it! Such a simple meal. I’ll warn you now – everyone will want seconds and you won’t have any leftovers:)

This lighter version of egg rolls eliminates fried wrappers, calls for ground turkey instead of ground pork, and is served with cauliflower rice instead of white rice. Egg Roll in a Bowl {An Easy One Skillet Meal}

The simple, fresh flavors of this Egg Roll Skillet meal create a tasty dinner the entire family will love in less than 30 minutes.  This also means that there is only one pan to clean.  What’s not to love about that?!  This family-friendly meal is perfection!

  • 2 tablespoons Mazola Corn Oil
  • 1 small yellow onion, diced
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 pound ground turkey
  • 1 (16 ounces) bag coleslaw mix
  • 1 tablespoon soy sauce
  • 1/4 cup chopped green onions
  • salt and pepper to taste
  • Serve with duck sauce and cauliflower rice (optional)


  1. Heat oil in large skillet.  Add half of the ginger, half of the garlic, and diced onions to skillet.  Saute until onions are softened, about 4 minutes.
  2. Add turkey to skillet.  Break turkey into small pieces using a spoon and stir until cooked completely.
  3. Toss in coleslaw mix, remaining ginger and garlic, and soy sauce with ground turkey in skillet.  Allow to cook, mixing frequently until cabbage is tender.
  4. Add in a little more soy sauce in needed and top with green onions.
  5. Serve over cauliflower rice with duck sauce.
