Easy Mexican Dip with Veggie Chips

I have a confession to make. I LOVE potato chips!
Everyday around 2:00 I start craving a snack which usually means I pig out on a bag of potato chips. I even keep a bag in my desk at school – which is so dangerous because before I know it, the entire bag is gone.
So I was thrilled to see that Green Giant has come out with Veggie Chips – chips made with real vegetables. Finally a chip that is healthy and tastes great. Now I can pig out on these healthy chips and not feel guilty about it.
I tried two flavors of the Green Giant Veggie chips: Multigrain Barbecue Sweet Potatoe Chips and the Garden Ranch Roasted Veggie Tortilla Chips.
And since tortilla chips taste great with dip, I whipped together an easy Mexican Dip that tasted great with the Veggie Tortilla Chips.
I should call this Mexican Dump Dip because I literally dump everything in one baking dish and mix it all up. Then I add the cheese and throw it in the oven.
Super easy to make!!

Easy Mexican Dip – The easiest appetizer. Just dump all the ingredients in a baking dish and you have a delicious appetizer that everyone will love!
Ingredients
- 1 packet of taco seasoning
- 8 oz neufchatel cheese (softened)
- 1 cup of sour cream (8 oz container)
- 1 can of refried beans
- 1 (4 oz) can diced green chiles
- 1 cup of salsa
- 1 cup of shredded cheese
Instructions
- Mix all ingredients except cheese in baking dish. Sprinkle cheese on top.
- Bake at 350 degrees for 15 minutes.
- Serve with tortilla chips.
