Connor loves chocolate chip cookie dough ice cream so I thought it would be fun to make Chocolate Chip Cupcakes with Chocolate Chip Cookie Cough Icing.
I made the cupcakes and Connor was in charge of icing the cupcakes. Then we decided it would be fun to add even more chocolate chips to the top of them.
Can you ever have too many chocolate chips?
I started by making the cupcakes.
Chocolate Chip Cupcakes:
- 3/4 cup butter, softened
- 3 eggs
- 2 1/2 cups flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 3/4 cups sugar
- 1 1/4 cups milk
- 3/4 cup mini-chocolate chips
Step 1: Preheat oven to 350 degrees. Line muffin cups with cupcake liners.
Step 2: In medium bowl, stir together flour, baking powder, and salt.
Step 3: In separate bowl mix butter with mixer. Gradually add sugar and continue to mix until combined. Add eggs one at a time while mixing.
Step 4: Add flour mixture, vanilla, and milk to butter mixture. Continue to mix until combined.
Step 5: Stir in chocolate chips. Spoon batter into prepared muffin cups.
Step 6: Bake for 18-22 minutes.
Chocolate Chip Cookie Dough Icing
- 1 cup butter, softened
- 1 cup brown sugar
- 3 cups confectioners sugar
- 2-3 tablespoons milk
- 2 teaspoon vanilla extract
- 2 cups mini chocolate chips
Step 1: Mix butter and brown sugar with hand mixer.
Step 2: Gradually add confectioners sugar and continue to mix. Add milk and vanilla while still mixing.
Step 3: Fold in 1/2 cup chocolate chips and mix with a spoon.
Step 4: Spread icing on cooled cupcakes.
Step 5: Add rest of chocolate chips to a small bowl. Dip each cup cake into chocolate chip, covering the top of each one.
