Asparagus and Corn Caprese Salad

Ingredients

  • 1 container cherry tomatoes halved
  • 8 ounce package mozzarella pearls
  • 2 cups sweet corn
  • 1 pound of asparagus chopped
  • 10-15 leaves of fresh basil - chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • salt and pepper to taste

Instructions

  • Add tomatoes, mozzarella, corn, asparagus and basil to large bowl. Mix with large spoon.
  • Mix oil and vinegar in small bowl or cup. Pour over veggies and cheese.
  • Season with salt and pepper.
  • Serve immediately or store in refrigerator in airtight container.
  • Enjoy!
