- 1 can 10 1/2 ounces Condensed Cream of Chicken Soup
- 1 1/4 cups chicken broth or water
- 3/4 cup instant rice
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 teaspoon poultry seasoning
- salt and pepper to taste
- 12 ounce bag of frozen mixed vegetables a little over 2 cups of carrots, corn, green beans, peas
- 3 large or 4 small boneless skinless chicken breast
- 1/2 cup shredded Cheddar cheese
Heat oven to 375° and spray 9x13 baking dish with cooking spray.
Add soup, broth, rice, onion powder, garlic powder, paprika, and poultry seasoning to baking dish. Stir until well combined. Sprinkle in vegetables and season with salt and pepper.
Place chicken on rice mixture and season chicken with salt and pepper. Cover with aluminum foil.
Bake for 30-35 minutes or until chicken is done and the rice is tender. Remove from the oven and sprinkle with the cheese. Let stand for 5 minutes. Stir the rice mixture and season with salt and pepper to taste before serving.
