Berry Baked Oatmeal

This delicious Berry Baked Oatmeal is the perfect breakfast recipe! Crunchy on the outside and warm, gooey and fruity on the inside. Top it with a little vanilla yogurt for a decadent and healthy breakfast or snack.

Ingredients

  • ¼ cup natural almond butter
  • ¼ cup coconut oil
  • ¼ cup honey
  • ¼ cup milk
  • 4 cups rolled oats
  • 1 Tbsp baking powder
  • 1 tsp cinnamon
  • pinch of salt
  • ½ cup almond flakes
  • 1.5 cups frozen blueberries or fresh

Instructions

  • Preheat the oven to 350ºF and line a 9x9 baking dish (or similar) with parchment paper.
  • In a small pot mix together the almond butter, coconut oil, honey and milk and bring to a boil or microwave for 1-2 minutes until coconut oil has melted.
  • Remove mixture from stovetop or microwave and stir in vanilla extract. Stir until well combined. Let cool for 5 minutes.
  • In a large bowl, mix together the rolled oats, baking powder, cinnamon, salt, and almond flakes. Add the cooled down almond butter mixture and mix well to combine. Add berries and stir to combine.
  • Spread the oat mixture into the baking dish and press down with your spatula. Sprinkle some extra blueberries and flaked almonds on top.
  • Bake for 20-30 minutes or until the top is crisp and golden brown and the middle is set. Remove from the oven and let it cool for 10-15 minutes before cutting into squares and serving. Serve with a big dollop of yogurt, fresh fruit, and a drizzle of honey or maple syrup. Enjoy!
