Preheat the oven to 350 degrees Fahrenheit.
Add oats, almonds, salt, cinnamon, and orange zest in a large bowl. Stir to combine.
Add oil, maple syrup or honey, and almond extract. Stir to combine.
Add coconut and mix together.
Spread on a cookie sheet lined with parchment paper.
Cook for a total of 20-25 minutes until browned, removing every 10 minutes to mix so granola
cooks evenly.
Remove from oven and let cool. Stir in chocolate chips, fruit, or any additional toppings.
Serve immediately or store in an air-tight container at room temperature.
