One Pot Burrito Bowls

Do you love one pot meals as much I do?  Then, you have to make this recipe for One Pot Burrito Bowls.  It's a 30 minute meal made in one pot - now, this is my kind of cooking!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey or ground beef
  • 1/2 green pepper
  • 1/2 sweet onion
  • 1/2 teaspoon garlic
  • 1 can black beans rinsed and drained
  • 1 can corn drained
  • 1 can tomatoes with green chiles
  • 2 cups chicken broth
  • 1 cup minute brown rice
  • 1 1/2 tablespoons taco seasoning
  • 1/2 teaspoon red pepper flakes
  • salt and pepper to taste
  • 1 cup cheese
  • optional toppings - tortilla chips salsa, lettuce, sour cream, guacamole, tomatoes, green onions, jalapenos

Instructions

  • Heat olive oil in large pan.  Add onions, green peppers, and garlic to pan.  Saute for 2-3 minutes or until onions are brown.
  • Add in ground turkey (or ground beef) and cook until browned.  Drain grease.
  • Stir in black beans, corn, tomatoes with green chiles, rice, taco seasoning, and red pepper flakes.
  • Pour in chicken stock and stir to combine ingredients.  Bring liquid to a light boil over medium heat.
  • Cover pan and simmer on low heat.  Cook for 15- 20 minutes or until rice is tender.  Season with salt and pepper to taste.
  • Remove pan from heat.  Sprinkle with cheese and cover for an additional 2-3 minutes to melt cheese.
  • Serve over lettuce with your favorite toppings.
