Heat olive oil in large pan. Add onions, green peppers, and garlic to pan. Saute for 2-3 minutes or until onions are brown.
Add in ground turkey (or ground beef) and cook until browned. Drain grease.
Stir in black beans, corn, tomatoes with green chiles, rice, taco seasoning, and red pepper flakes.
Pour in chicken stock and stir to combine ingredients. Bring liquid to a light boil over medium heat.
Cover pan and simmer on low heat. Cook for 15- 20 minutes or until rice is tender. Season with salt and pepper to taste.
Remove pan from heat. Sprinkle with cheese and cover for an additional 2-3 minutes to melt cheese.
Serve over lettuce with your favorite toppings.
