Stir together cookie crumbs, powdered sugar and cocoa in large bowl.
Whisk together bourbon and corn syrup in small bowl.
Slowly add bourbon mixture to dry ingredients and mix together until well blended.
Press dough into 8x8 baking dish and refrigerate until set, at least 2 hours or overnight.
Meanwhile, melt chocolate with butter and corn syrup over low heat in a double boiler.
Pour chocolate over chilled bars and spread evenly. Sprinkle with sprinkled and press into chocolate.
Chill until chocolate is set.
Cut into bars before serving.
