Cheddar Ale Dip with Pico De Gallo
Cheddar Ale Dip with Pico De Gallo - A delicious and cheesy dip full of flavor and topped with pico de gallo. Pair with soft pretzels and chips for the perfect appetizer!
Ingredients
- 1 bottle of ale beer
- 2 tablespoons butter
- 2 tablespoons flour
- 4 oz Neufchatel cream cheese cut into pieces
- 2 cups shredded cheddar cheese
- 2 tablespoons spicy brown mustard
- 1 tablespoon hot sauce
- salt and pepper to taste
- Pico De Gallo homemade or store bought
Instructions
- Pour beer into bowl and stir to reduce carbonation.
- Melt butter in saucepan over medium heat. Add flour and stir constantly for 2 minutes.
- Slowly add beer and continue to stir.
- Increase heat to medium high and slowly add cheddar cheese, cream cheese. Whisk until all cheese has melted.
- Continue to stir and add mustard, hot sauce, salt, and pepper.
- Pour into small bowl and add Pico De Gallo. Serve with soft pretzel bites, pita chips, carrots, etc.
