Mediterranean Chopped Salad

Ingredients

Salad:

  • 4 cups chopped lettuce
  • 2 cups grape tomatoes halved
  • 1 cucumber diced
  • 1 can 15 ounces chickpeas, drained and rinsed
  • 1/2 cup Kalamata olives halved
  • 1/4 cup red onion chopped
  • 1/2 cup feta cheese cubed
  • salt and pepper

Dressing:

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt

Instructions

  • Prepare dressing by whisking together oil, vinegar, garlic, oregano, and salt.
  • Mix together lettuce, tomatoes, cucumbers, chickpeas, olives, onion, and feta cheese in large bowl.
  • Drizzle with vinaigrette and toss to combine salad. Add salt and pepper to taste.
