One Pot Chicken Alfredo Mac and Cheese

Ingredients

  • 2 tablespoons olive oil
  • 2 chicken breasts cut into cubes
  • salt and pepper to taste
  • 1 box pasta 16 ounces, uncooked
  • 2 jars Bertolli® Creamy Basil Alfredo Sauce
  • 1 1/2 cups water
  • 1 cup shredded white cheddar cheese or your favorite cheese - divided
  • 1 tablespoon Italian seasoning
  • 2 packages 10 ounces each frozen broccoli, carrots, and cauliflower
  • Garnish with fresh parsley and parmesan cheese optional

Instructions

  • Heat oil and chicken in large skillet over medium heat. Season chicken with salt and pepper to taste. Cook chicken until browned, about 5 minutes.
  • Add Alfredo sauce, water, uncooked pasta, Italian seasoning, and salt and pepper to taste. Stir to combine all ingredients.
  • Bring mixture to a boil. Reduce heat and cover. Cook for 10 minutes.
  • Stir pasta and add 1/2 cup cheese. Cook for an addition 5 minutes or until pasta is tender.
  • Sprinkle remaining cheese over pasta. Cover and cook on low heat for 3-5 minutes.
  • Top with parsley and parmesan cheese.
