Loaded Baked Potato Salad Recipe

- 10 medium sized red skin potatoes cut into 1/2 pieces
- 8 slices of bacon cooked and crumbled
- 1 cup sour cream
- 1/2 cup mayonnaise or plain Greek yogurt
- 1 cup extra sharp cheddar cheese shredded
- ¼ cup fresh chives chopped
- Salt and pepper to taste
Place red potatoes in large pot. Fill with water until potatoes are just covered. Add a teaspoon of salt to water, if desired. Heat to boiling and simmer 8 to 10 minutes or until potatoes are tender. Drain potatoes and rinse with cold water until cool. Set aside.
In large bowl, whisk together sour cream, mayonnaise, salt and pepper.
Add cooled potatoes to bowl and mix until potatoes are evenly coated.
Mix in crumbled bacon, shredded cheese and green onions. Gently stir to combine.
Serve immediately or cover and refrigerate until ready to serve.
- If made ahead of time, potatoes may dry out a little. Add a few tablespoons of sour cream right before serving.
- Can be served cold or heated up for a warm side dish.
