Valentine’s Day PayDay Bars – A chewy crust topped with marshmallows, peanuts, M&M’s and more. These festive cookies bars are the perfect Valentine’s Day treat! 

Ingredients

  • 1 stick of butter (softened)
  • 1 package of yellow cake mix
  • 1 egg
  • 3 cups of miniature marshmallows
  • 1/2 cup light corn syrup
  • 1/4 cup sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 2 teaspoons vanilla
  • 2 cups rice cereal
  • 2 cups salted peanuts
  • 1 cup M&M’s

Instructions

  1. Preheat oven to 350°F.  Mix butter and cake mix in large bowl.  Add egg and continue mixing.
  2. Spread dough into 9×13 baking pan and bake for 12-15 minutes.  Remove from oven and add marshmallows to top of crust.  Place back in oven for 3 minutes.
  3. Combine corn syrup, sugar, and brown sugar to saucepan.  Cook over medium heat, stirring until it starts to boil (about 3-4 minutes).  Remove from heat and stir in peanut butter and vanilla.  Stir in cereal and peanuts.  Spoon over marshmallows and spread evenly. Sprinkle M&M’s over peanut butter cereal mixture.
  4. Let bars cool completely before cutting.
  5. Cut into squares and enjoy!
