Superfood Breakfast Bars

Superfood Breakfast Bars – Breakfast bars packed with nutritious ingredients.  Make these healthy bars ahead of time for the perfect breakfast on the go.

Ingredients

  • 2 1/2 cups Old Fashioned Rolled Oats
  • 1/4 cup dried blueberries
  • 1/2 cup goji berries or dried cranberries
  • 1/4 cup sunflower seeds
  • 1/2 cup chopped pecans
  • 1 tablespoon chia seeds
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup coconut oil – melted
  • 1/4 cup honey
  • 1/2 cup peanut butter

Instructions

  1. Preheat oven to 350 degrees. Spray 9 x 9 baking dish with cooking spray or line with parchment paper.
  2. Mix all dry ingredients in large bowl.
  3. In medium bowl, mix eggs, coconut oil, honey and peanut butter. Slowly combine wet ingredients with dry ingredients.
  4. Spread mixture evenly into the baking dish. Bake for 20-25 minutes or until bars are light golden brown and center is firm. Let cool for 5 minutes before cutting into squares.
  5. Store in an airtight container.
  6. Enjoy!
