I’ve decided that every holiday should be celebrated with a mimosa and since you can’t celebrate St. Patrick’s day without drinking something green, this Leprechaun Mimosa is the perfect drink for St Patrick’s day.

I’m sure you know that a traditional mimosa calls for champagne and orange juice but we needed our mimosa to be green so we added a splash of Blue Curacao and look at that gorgeous drink?!   And, it’s a good thing I have plenty of Blue Curacao left because these mimosas are delicious.

St. Patrick’s Day Leprechaun Mimosa

This is an easy St. Patrick’s day cocktail recipe that only calls for three ingredients. First, you want to mix orange juice and Blue Curacao in a champagne flute.  Then, just fill the rest of the glass with champagne, prosecco, or your favorite sparkling wine.

Ingredients
  

  • 1 bottle chilled Champagne Prosecco, or your favorite sparkling wine
  • 2-4 cups pulp-free orange juice
  • 1 cup Blue Curacao

Instructions
 

  • Fill champagne flute 1/3 of the way with orange juice.  Add a splash of Blue Curacao to champagne flute and mix with a straw or spoon.
  • Slowly fill the rest of the glass with your favorite sparkling wine.
  • Enjoy!
