Pork Sliders with Mango Pineapple Coleslaw – Grilled pork topped with homemade Mango Pineapple Coleslaw. An easy summer dinner!


  • 1 Smithfield Roasted Garlic & Herb Marinated Fresh Pork Tenderloin
  • 4 cups shredded cabbage (I used red and green)
  • 1/2 cup grated carrots
  • 1/2 cup pineapple, diced
  • 1/2 cup mango, diced
  • 1/3 cup Greek yogurt
  • 1/2 tablespoon apple cider vinegar
  • 1 tablespoon pineapple juice
  • 2 tablespoons cilantro, chopped
  • a squeeze of lemon juice
  • 1/2 teaspoon onion powder
  • salt and pepper to taste
  • 12 slider buns
  • BBQ sauce (optional)


  1. Prepare pork tenderloin according to package directions. Slice thinly.
  2. In medium bowl, mix cabbage, carrots, pineapple, and mango.
  3. In small bow, whisk yogurt, vinegar, pineapple juice, onion powder, salt and pepper. Pour over cabbage mixture and toss to coat.
  4. To assemble sandwiches, add pork, BBQ sauce, and mango pineapple coleslaw to slider buns.
  5. Enjoy!
