One Pot Chicken Alfredo Mac and Cheese

  • 2 tablespoons olive oil
  • 2 chicken breasts, cut into cubes
  • salt and pepper to taste
  • 1 box pasta (16 ounces), uncooked
  • 2 jars Bertolli® Creamy Basil Alfredo Sauce
  • 1 1/2 cups water
  • 1 cup shredded white cheddar cheese (or your favorite cheese) – divided
  • 1 tablespoon Italian seasoning
  • 2 packages (10 ounces each) frozen broccoli, carrots, and cauliflower
  • Garnish with fresh parsley and parmesan cheese (optional)

Instructions

  1. Heat oil and chicken in large skillet over medium heat. Season chicken with salt and pepper to taste. Cook chicken until browned, about 5 minutes.
  2. Add Alfredo sauce, water, uncooked pasta, Italian seasoning, and salt and pepper to taste. Stir to combine all ingredients.
  3. Bring mixture to a boil. Reduce heat and cover. Cook for 10 minutes.
  4. Stir pasta and add 1/2 cup cheese. Cook for an addition 5 minutes or until pasta is tender.
  5. Sprinkle remaining cheese over pasta. Cover and cook on low heat for 3-5 minutes.
  6. Top with parsley and parmesan cheese.
