One Pot Burrito Bowls

Do you love one pot meals as much I do?  Then, you have to make this recipe for One Pot Burrito Bowls.  It’s a 30 minute meal made in one pot – now, this is my kind of cooking!

 

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey or ground beef
  • 1/2 green pepper
  • 1/2 sweet onion
  • 1/2 teaspoon garlic
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can tomatoes with green chiles
  • 2 cups chicken broth
  • 1 cup minute brown rice
  • 1 1/2 tablespoons taco seasoning
  • 1/2 teaspoon red pepper flakes
  • salt and pepper to taste
  • 1 cup cheese
  • optional toppings – tortilla chips, salsa, lettuce, sour cream, guacamole, tomatoes, green onions, jalapenos

Instructions

  1. Heat olive oil in large pan.  Add onions, green peppers, and garlic to pan.  Saute for 2-3 minutes or until onions are brown.
  2. Add in ground turkey (or ground beef) and cook until browned.  Drain grease.
  3. Stir in black beans, corn, tomatoes with green chiles, rice, taco seasoning, and red pepper flakes.
  4. Pour in chicken stock and stir to combine ingredients.  Bring liquid to a light boil over medium heat.
  5. Cover pan and simmer on low heat.  Cook for 15- 20 minutes or until rice is tender.  Season with salt and pepper to taste.
  6. Remove pan from heat.  Sprinkle with cheese and cover for an additional 2-3 minutes to melt cheese.
  7. Serve over lettuce with your favorite toppings.
