Loaded Baked Potato Salad Recipe

- 10 medium sized red skin potatoes, cut into 1/2 pieces
- 8 slices of bacon, cooked and crumbled
- 1 cup sour cream
- 1/2 cup mayonnaise or plain Greek yogurt
- 1 cup extra sharp cheddar cheese, shredded
- ¼ cup fresh chives, chopped
- Salt and pepper to taste
Instructions
- Place red potatoes in large pot. Fill with water until potatoes are just covered. Add a teaspoon of salt to water, if desired. Heat to boiling and simmer 8 to 10 minutes or until potatoes are tender. Drain potatoes and rinse with cold water until cool. Set aside.
- In large bowl, whisk together sour cream, mayonnaise, salt and pepper.
- Add cooled potatoes to bowl and mix until potatoes are evenly coated.
- Mix in crumbled bacon, shredded cheese and green onions. Gently stir to combine.
- Serve immediately or cover and refrigerate until ready to serve.
Notes
- If made ahead of time, potatoes may dry out a little. Add a few tablespoons of sour cream right before serving.
- Can be served cold or heated up for a warm side dish.
