Donut Muffins:
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon nutmeg
1/3 cup sugar
1/4 cup milk or half and half
1/4 cup Greek yogurt
1 egg
2 tablespoons butter, melted
1/2 teaspoon vanilla
1/2 cup rainbow sprinkles
Vanilla Glaze
2–3 tablespoons half and half or milk
3/4 cup powdered sugar
extra sprinkles
Instructions
Preheat oven to 350 degrees. Spray a mini muffin pan with non-stick spray.
Mix flour, baking powder, baking soda, nutmeg and sugar in mixing bowl. Set aside
In separate bowl, whisk creamer, yogurt, egg, and melted butter together until smooth. Add wet ingredients to dry ingredients and mix until well combined. Fold in sprinkled.
Add a spoonful of batter into mini muffin cups, filling 3/4 of the way.
Bake for 10 minutes.
While donut muffins cool, stir together creamer and powdered sugar until well-combined.
