Cheesy Chicken and Rice Bake

This quick and easy recipe for Cheesy Chicken and Rice Bake is perfect for busy week nights. An easy recipe the entire family will love!


  • 1 can (10 1/2 ounces) Condensed Cream of Chicken Soup
  • 1 1/4 cups chicken broth or water
  • 3/4 cup instant rice
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon poultry seasoning
  • salt and pepper to taste
  • 12 ounce bag of frozen mixed vegetables (a little over 2 cups of carrots, corn, green beans, peas)
  • 3 large or 4 small boneless, skinless chicken breast
  • 1/2 cup shredded Cheddar cheese


  • Heat oven to 375° and spray 9×13 baking dish with cooking spray.
  • Add soup, broth, rice, onion powder, garlic powder, paprika, and poultry seasoning to baking dish.  Stir until well combined.  Sprinkle in vegetables and season with salt and pepper.
  • Place chicken on rice mixture and season chicken with salt and pepper.  Cover with aluminum foil.
  • Bake for 30-35 minutes or until chicken is done and the rice is tender.  Remove from the oven and sprinkle with the cheese.  Let stand for 5 minutes.  Stir the rice mixture and season with salt and pepper to taste before serving.
