Cheddar Ale Dip with Pico De Gallo – A delicious and cheesy dip full of flavor and topped with pico de gallo. Pair with soft pretzels and chips for the perfect appetizer!

Ingredients

1 bottle of ale beer
2 tablespoons butter
2 tablespoons flour
4 oz Neufchatel cream cheese (cut into pieces)
2 cups shredded cheddar cheese
2 tablespoons spicy brown mustard
1 tablespoon hot sauce
salt and pepper to taste
Pico De Gallo (homemade or store bought)
Instructions
Pour beer into bowl and stir to reduce carbonation.
Melt butter in saucepan over medium heat. Add flour and stir constantly for 2 minutes.
Slowly add beer and continue to stir.
Increase heat to medium high and slowly add cheddar cheese, cream cheese. Whisk until all cheese has melted.
Continue to stir and add mustard, hot sauce, salt, and pepper.
Pour into small bowl and add Pico De Gallo. Serve with soft pretzel bites, pita chips, carrots, etc.
